recipe adapted from Smitten Kitchen, makes about 20 cookies
Perfect for Valentine's Day
Ingredients:
1/2 cup butter, softened
2/3 cup light brown sugar, packed
1 egg
1 tablespoon vanilla
3/4 cup Bistro Blend GF Flour
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
1 1/2 cup Certified GF rolled oats
3/4 cup mix-in of choice (dried cherries, raisins or walnuts), chopped coarsely
1 egg
1 tablespoon vanilla
3/4 cup Bistro Blend GF Flour
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
1 1/2 cup Certified GF rolled oats
3/4 cup mix-in of choice (dried cherries, raisins or walnuts), chopped coarsely
Directions:
1. Preheat oven to 350. Line a baking sheet with parchment paper.
2. In a large bowl, cream together the butter, sugar, egg and vanilla until smooth. In a separate bowl, sift together the flour, soda, cinnamon and salt. Stir the dry ingredients into the wet until combined. Stir in the oats and your favorite mix-in.
3. Chill the dough for 60 minutes.
4. Scoop by the tablespoon onto the baking sheet. Bake for 12 minutes. Let cool on the baking sheet for 5 minutes, then transfer cookies to a rack to cool.
